The Christmas season, to me, all the time consists of oranges… the brilliant, citrus aroma is just one of many smells that says Christmas to me…

There’s just the 2 of us on this household now, however I can not assist myself, I Will need to have oranges within the house round Christmas… when the children had been home I didn’t have one bit of bother going via a bag of oranges, tangerines, or clementines… but now with simply Mr. Granny and myself, it takes a little longer… however I nonetheless purchase them…

And there they sat, in that fruit bowl, beginning to dry out a bit of across the edges… one thing needed to be accomplished… cannot waste all that citrusy goodness… so I determined to can them…

Here’s what I did…

First, I peeled them, and segmented them (I had a pair lemons in that bowl too, so I added them to the mix)

Probably the most labor intensive part of citrus is removing all the pithy white half… it is tasteless, powerful, and unnecessary… so I fastidiously eliminated as much of the white part as I possibly could. And it’s pretty vital to remove any seeds until you don’t thoughts coming throughout a seed or two when you are eating them later.

For oranges, which are quite candy on their own, a syrup isn’t fully crucial, but I did have these few lemons, so I selected to combine up an ultra gentle syrup (1/2 cup sugar to 5 cups water)… orange juice might be used for the liquid, or simply plain old water.

I introduced the sugar/water mixture to a boil, ensuring all the sugar was dissolved.

After boiling my jars to sterilize them, I put my orange segments into the jars, pretty loosely packed and leaving a very good half inch headspace.

I ladled the hot syrup into the jars.

Then ran a butter knife between the inside of the jar and the fruit to take away any air bubbles… then added extra syrup to the jar if vital.

I wiped the rims of the jars with a damp cloth…

And, using my handy dandy magnetic wand, eliminated the lids from the simmering water I had positioned them in earlier…

…and tightened them onto the pint canning jars to a fingertip tightness.

I processed the jars of oranges in a boiling water bath (place the jars in a canner or massive pot, guaranteeing they are fully lined with water, then convey to a boil and start timing) for ten minutes.

After processing, I removed the hot jars using my jar lifter and set them on a folded dish towel on the counter to cool, and to pay attention for the PING of each successfully sealed jar. (LOVE that sound!)

I loved canning the few oranges I had left over from Christmas so much, the next day I made a visit to the grocery retailer and bought another huge bag of oranges, a bag of clementines, and a huge bag of grapefruit to put up some more!

While I was preparing the grapefruit for canning, I decided to make use of the peel for a couple things… like dehydrating some for using later in recipes… as soon as these are dry, I’ll give them a whirl in the blender and store them in a jar to be used in cakes, cookies, and even some pork or hen dishes.

I put among the grapefruit peels right into a pint jar and filled it up with vodka to make grapefruit extract… I’ve accomplished lemon, orange, peppermint, and vanilla extract earlier than… why not grapefruit!?

Side story… I am a very good Baptist girl from the South… we do not drink! And we positive don’t communicate to each other within the liquor retailer (LOL! If you adored this information and you would such as to receive more facts concerning plant extract, similar internet page, kindly check out our page. )… Mr. Granny, however, is an effective Episcopalian (aka “Whiskypalian)… and he has no downside with talking to people within the liquor retailer (it is a operating joke between the 2 of us, only a bit of fun, of us, don’t get your panties in a wad!)…

In the future just a few months ago we have been on the facet of city the place we seldom go, at Northern Tools picking up some issues… there’s a low cost beverage store on that aspect of city… as we left Northern Tools, I requested Mr. Granny, “Do you thoughts if we stop on the liquor retailer while we’re over right here?” I believed the man was gonna fall out of the automobile he was so surprised! “Well, Sure!” says he. I laughed until tears ran down my face at his response… I needed vodka for making extract… actually I did… actually…

Aren’t these jars of canned grapefruit so pretty? When i canned them, I used a light syrup as an alternative of ultra light…
